Non binary people should be able to use the restroom that they believe they will be safest in. F or many non binary people, using either the women’s or the men’s rest room might feel unsafe, because others may verbally harass them or even physically attack them. Understand that, for many nonbinary people, navigating gendered spaces - like bathrooms - can be challenging. It’s important for nonbinary people to be able to live, dress and have their gender respected at work, at school, and in public spaces. Asking whether someone should be referred to as “he,” “she,” “they,” or another pronoun may feel awkward at first, but is one of the simplest and most important ways to show respect for someone’s identity.Īdvocate for non-binary friendly policies. I then cover my dough with a towel and let him sit overnight, usually between 14-18 hours. The dough is so wet that I only need to stir to combine - no kneading the night before! The evening before I plan to make bread, I mix up the batch: one cup of Merv, three cups room-temperature water, one teaspoon of salt, and six cups of flour (I use half bread flour and half whole-wheat flour). Sourdough bread is a slow-fermented bread that is naturally leavened with a sourdough starter. You can also make your own sourdough starter or purchase one. No kneading or heavy mixing is necessary. If you want to try your hand at sourdough, I'm happy to share a bit of Merv with you. Youll be amazed at how easy this overnight sourdough bread recipe is. Merv is made of wild yeast found in the environment the exact type of yeast varies from place to place, which is why New York sourdough tastes a little different than San Franciscan sourdough. Merv the Sourdough Starter is the leavening agent for the bread and he has living yeast in him - thus the need for regular feeding and also the reason you can see him grow before and after eating. I put him on a scale and feed him equal parts (by weight) flour and water, stir him up, and let him rest at room temperature a few hours. Two days before I'm ready to bake my bread, I start the process by feeding Merv, my beautiful sourdough starter. However, once you try it a couple times you'll realize just how easy it is. Making homemade bread seems like a scary thing if you've never done it before. The longer the ferment, the longer the lactobacilli have to create acid and flavor the bread! To make a more sour loaf, add an extra teaspoon of salt to slow down the fermentation and allow the lactobacilli more time to produce this acid. ![]() Lactobacillus produces an acid that makes fermented foods such as yogurt, sauerkraut, kombucha, and sourdough bread taste sour. This is one of the famous probiotics that is healthy for your gut (check out my previous post about probiotics). Yeast is responsible for leavening, but the unique flavor of sourdough is thanks to a bacteria found in Merv, called lactobacillus. I like to break it off and dip it in olive oil before eating the soft middle. You know, the golden brown, chewy goodness on every piece. But it didn't have that traditional sourdough crust. Sung was, in fact, following in the footsteps of marginalized communities all over the country. “They were very friendly people, I remember.” “Being a lawyer, completing forms was not a problem for me,” Sung says. So they handed him a thick application packet. But while there were plenty of banks in Chinatown and plenty of deposits from Chinese-American businesses and workers in those banks, no one was interested in lending to Chinese immigrants and other Asian Americans. He went to ask about obtaining a charter for a new savings and loan association.Īs he told the Federal Home Loan Bank staff, the clients he had helped over the previous 20 years in his Chinatown law practice, with immigration issues and filing documents to incorporate their businesses, now needed loans to buy homes. Back in those days it was in the Twin Towers, not far from Chinatown. That same year, Thomas Sung took a different walk, to the offices of the Federal Home Loan Bank of New York. By the spring of 1982, 20,000 garment workers, nearly all of them Chinese-American women, marched down Chinatown’s Mott Street to Columbus Park and held a rally to demand that garment factories renew the contracts with their union. Many who landed in the neighborhood went to work in small-scale garment shops. The act was technically repealed in 1943, but strict quotas on Chinese immigrants didn’t go away till 1965, and that’s when Chinatown started to grow again. It was more than 100 years since the Chinese Exclusion Act put severe limits on Chinese immigration.
